Big differences among very close geographic places, is the major characteristic of Italian gastronomy. The reason of this peculiarity comes from the history and the morphology of Italian land. History tells that during the ancient past, Italy had always been a country divided in several parts, dominated by different political and military powers. Furthermore its morphology characterized by the Apennino and Alpi chains, made very difficult any kind of travel. So cultures of these different Italian parts have had big obstacles to mix together and this explains because close Italian zones have still nowadays evident food differences.

A clear example about what told here above, comes from Bobbio and Varzi, the first located in Emilia Romagna region and the second in Lombardia region. These two little villages are more or less only 30 kilometers away, and they are connected by a narrow mountain road that goes through a pass called Passo del Penice, but belive it, they have pretty different gastronomy !

To have an example of Bobbio dishes, Ristorante Nobile has been visited. This is not a refined restaurant, but for sure here the good gastronomy of Bobbio can be savoured.

Among several choices, of course as entry dish cured meat cannot be missed, but also Sarde impanate e fritte con crème fraiche e misticanza has been tasted. As first course pasta is a must, especially Maccheroni alla Bobbiese. This kind of pasta is handmade by means of a special tool that gives it a specific elongated shape. This tool is simply a knitting needle. The ragù mixed up with pasta, must be cooked with a very long process that gives a delicious flavour.

As second course is suggested Filetto di maialino lardellato con pancetta cotta Giovanna, salsa ai funghi porcini e chips di patate, that in a nutshell means meat of little pig cooked with pancetta cotta Giovanna (a special and tasty cured meat), sauce of porcini (a very tasteful and rare kind of mushroom) and potatoes. But of course many second dishes can be found inside the menu of Ristorante Nobile.

All this escorted with good red wine named Gotturnio frizzante. It must be told that Emilia is not a land of fine wines, but Gotturnio and Lambrusco are fantastic with the food of this part of Emilia Romagna region. Of course the gastronomy test has been closed with delicious desserts. So don’t miss this special palate experience !
