Lo Grand Baou means “the biggest stable of the hamlet” and the name immediately makes you understand what the origins of this unbelievable site are. It is literally immersed in the Vallone di Vertosan, a small lateral valley of the grater Valle d’Aosta at an altitude of 2000 meters.
The watershed of Vertosan Valley is made up of mountains that reach 3000 meters above sea level and even higher. The environment is characterized by vast forests of pine trees and large meadows used by some farms that breeds cows.
To be underlined that the milk is used for the Fontina d’Alpeggio, the well-known cheese characteristic of Valle d’Aosta, but in this case only directly worked on farms located at high altitudes where during the summer cows can eat particular types of grass, giving the cheese a special flavour.
Lo Grand Baou restaurant can offer dishes cooked with local products using ancient recipes. Keep in mind that there is not a big variety of ingredients in mountain. Mainly you can find flour for Polenta, Fontina and others minor cheeses, butter, some vegetables, meat, cured meat, apples and grape grown in the bottom of Valle d’Aosta, and others types of very simple ingredients. At any rate, considering this introduction, the Lo Grand Baou restaurant is super !
We have tasted castagne con burro (chestnuts with butter), lardo (lard – a kind of very fatty cured meat), Ricotta con erbe (a very light cheese savoured with special herbs), Polenta con Fontina e cipolle (Polenta with Fontina and onions), Zuppa alla Valpellinnese (particular soup with Fontina, black bread, cabbage), Carbonada con Polenta (beef stew coked in red wine of Valle d’Aosta accompanied by Polenta) and last but not least a parade of local cheeses. Of course all this with a drop dead fantastic local red wine and closing this gastronomic experience with dessert.
So a tip from BBofItaly.it: don’t visit Lo Grand Baou restaurant if you are on diet ! But anyway if you eat too much in the evening, the next day you can have the opportunity to go along Vallone di Vertosan for very long hiking experiences to completely consume the calories of the dinner. Or even after the dinner you can find some rest in the welcoming rooms of Lo Grand Baou. So don’t miss to visit this special place in Valle d’Aosta !
