Il Torchio 1763 is a very particular restaurant in Ricetto di Candelo a beautiful hamlet in Biella district Piemonte region.

Torchio means a device for exerting pressure, a press. This restaurant has this particular name because in the ancient times there was a press in its hall, still present.

Recipes that can be tasted at the restaurant, are very particular and some are local. We of BBofItaly have tasted:

As first course: La Polenta Concia del Torchio – a very soft Polenta mixed up whit cheeses and butter, a delicate flavor. Gnocchi soffiati con Crema di Cavolfiore viola e Trito di Nocciole Piemonte – puffed gnocchi with purple cauliflower cream and chopped Piedmont hazelnuts. Gnocchi is a kind of pasta but done with potatoes and the mix of flavors in this recipe is fantastic. Risotto alla Biellese con Riduzione di Nebbiolo e Cestino di Parmigiano – Biellese Risotto with Nebbiolo Reduction and Parmesan Basket. Piemonte region is the land of rice and Risotto means cooked rice, in this case with fantastic red wine named Nebbiolo and Parmigiano Reggiano one of the most famous Italian cheeses. This recipe absolutely cannot be missed !

As second dish: Brasato al Nebbiolo con Purè di Patate – Braised in Nebbiolo with mashed potatoes – and Tagliata di Manzo alla Robespierre con Bouquet di Misticanza e Patate – Sliced Beef Robespierre style with Mixed Salad and Potatoes. These two types of meat are cooked with different fantastic recipes, considering also that Piemonte is so famous for its fabulous meat.

Of course the lunch was closed with two different desserts: Tiramisù – a fantastic soft cream done with Mascarpone cheese, coffee, eggs, Marsala wine – and Sorbetto all’Amaretto – Amaretto sorbet. Amaretto is a special kind of cookie prepared with almonds.

With dishes like those described above, the wine must be red with a strong flavor. So we of BBofItaly have decided for the Torchio 1763, a Nebbiolo produced by the restaurant, and for a Bramaterra a Biellese wine produced with Nebbiolo, Bonarda and/or Vespolina, Croatina grapes.
